                "Infuse the gin: drop 2 Earl Grey bags into 200ml gin and leave 2 to 3 hours at room temperature, no longer or it turns tannic and dry. Squeeze gently and remove the bags. This makes enough for four drinks and keeps for weeks.",
                "Fill a large glass to the top with ice; this chills the glass and slows dilution.",
                "Pour over 50ml of the Earl Grey infused gin.",
                "Add 150ml chilled tonic, pouring down a bar spoon or the side of the glass to keep the bubbles.",
                "Express an orange or lemon peel over the top and drop it in. Stir once, gently.",
