  1. Boil fresh water. Chamomile, unlike green tea or mint, is happy with water straight off the boil, which helps draw the gentle floral oils.
  2. Put the temple in the mug, pour the water over and cover with a saucer; covering keeps the delicate aroma in the cup rather than letting it steam away.
  3. Steep 5 to 6 minutes, longer than you might think. Chamomile flowers give up their honeyed sweetness slowly and will not turn bitter.
  4. Lift the bag out with one gentle press.
  5. Taste before sweetening; it is naturally honeyed. A little honey rounds it out, a slice of lemon brightens it.
