Chamomile Flowers Latte (Plant Based)

You'll need
- 3 Teapigs Chamomile Flowers tea temples
- 150ml just boiled water, for a strong concentrate
- 200ml barista oat or soya milk
- A quarter teaspoon vanilla extract, optional
- 1 teaspoon honey, to taste
Method
- Make a concentrate: pour the just boiled water over the 3 temples in a covered cup and steep 8 minutes. Three bags, little water and a long covered steep give a chamomile base strong enough to carry milk.
- Lift the temples out and stir the vanilla and honey into the hot concentrate.
- Heat the barista oat or soya to about 60C, steaming not boiling, and froth it.
- Pour the chamomile concentrate into a cup, add the warm milk slowly while stirring, then spoon the foam on top.
- Sip it slowly; with no caffeine and a soft honeyed flavour, it's a comforting drink to end the day.
