Elderflower (Sambucus nigra) is the small white blossom that produces British cordials and Continental liqueurs. It is bright, floral, summery, sweet without sugar. Echinacea (Echinacea purpurea) is the spiky purple-coned daisy, root and leaf used in herbal blends. Earthy, mildly bitter, with a slight tongue-tingle some drinkers notice and some do not. Pairing the two is sensible: elderflower softens the echinacea's edge.
4.2 out of 5 is a strong score on Lee's scale. He uses a sceptical 5-point system, and anything under 3.5 does not make it onto the shelf. The half-point deductions usually go to flavour balance and pack experience. The 0.8 deducted here was for the lemon note being too quiet to lift the bottom of the cup. Otherwise solid.

Brew for five minutes minimum with just-boiled water. The echinacea root needs the longer steep to extract properly. Drink straight or with a teaspoon of honey if the bitter edge is too much. Caffeine-free, drinkable at any time of day. Cold-brewing overnight in the fridge gives a milder cup that loses the echinacea note almost entirely.
