Why A Light Decaf Is The Difficult One
Roast level is the biggest single lever a roaster has, and it works by trade-off rather than by degree of quality. Take a bean further and you build body, crema and roast-derived bitterness while burning away the bean's own acidity and much of its origin character. Stop earlier and you keep brightness and sweetness at the cost of weight and of forgiveness.
